Creamy Sour Cream and Cheddar Potatoes
1 bag (24 ounces) frozen O’Brien potatoes (cubed with peppers and onions)
1-1/2 cups sour cream
1 can (10.75 ounces) cream of potato soup, condensed
1-1/2 cups grated cheddar cheese
1/3 cup green onion, sliced
1 cup french fried onions
Preheat oven to 350 degrees.
In a large bowl, mix potatoes, sour cream, soup, cheese, and green onion together. Spread mixture into a greased 9 x 13-inch pan. Bake uncovered 40—50 minutes, then sprinkle french fried onions over top. Bake an additional 15 minutes, or until bubbly around edges. Makes 8 to 10 servings.
